Home Cooking 30 Jul 2010 at 8:00pm Unlike some recipes for lemonade chicken that use frozen lemonade concentrate, this recipe begins with a homemade marinade made with fresh lemon juice, honey, and ginger. It is not overly sweet like some versions, but packs a lot of flavor with the perfect balance of sweetness, tang, and spice. As an added bonus, the marinade also tenderizes the chicken. It is easier and less expensive to use a whole chicken that you cut up yourself, but feel free to use chicken parts to suit your purposes. This is not an easy cut of meat to slice into pretty portions. I carve it from the bones and serve it rustic-style, in large chunks as seen in the photo. The dry rub is equally delicious on chicken, both whole chickens and chicken parts. Quinoa provides all eight essential amino acids, which makes it a complete protein, making it popular with vegetarians. It's also a good source of iron, fiber and B vitamins. Despite its status as a super grain, quinoa is technically a seed. Grain or seed, be sure to add some quinoa to your diet. Outside their store is a sign that counts down to the launch of a great seasonal flavor -- most recently, cantaloupe. The lines out the door on the sunniest of days seem to encourage more people to visit rather than less. Their ice cream is truly to die for. But for those of us trying to eat low fat, ice cream is one of those foods we need to limit. Made with cream and sugar, it's a dieter's worst nightmare. Indulging occasionally is OK, so long as we try and stick to a small half-cup portion (which looks pitifully small, I grant you). But what about those low fat or light ice creams out there? Have you found a great brand that's almost as good as the real thing? Which brands of low fat ice cream do you recommend, and why? It's easily available, though admittedly not cheap, and enjoyed by adults and kids alike. Salmon is a fatty fish, however, and many people following a low-fat diet might think they should avoid it. But you really shouldn't. A four-ounce serving of salmon is full of important nutrients including omega-3 fatty acids, which our bodies need but cannot generate. The American Heart Association recommends that we eat at least two servings of fish a week. Now I hate to be a party pooper, but the problem with the Fourth of July is the sheer volume of fattening foods: mounds of potato salad, juicy burgers topped with goodness-knows-what, dense and fudgy brownies, scoops of ice cream, and so on. I freeze the whole leaves and make pesto that I freeze in ice cube trays (remember ice cube trays?). It's a wonderful condiment and delicious ingredient in many recipes. I think the only way I don't use it is in desserts (although a mint pesto is a great addition to brownies).
